Whole Wheat Burritos with a Rare Mix

Whole Wheat Burritos with a Rare Mix

Ingredients
- 4 Whole Wheat Tortillas
- 1 can Black Beans
- 10 - 12 Canned Artichoke Pieces (each cut into 4 pieces)
- 20 Cherry Tomatoes (small ones used for salad)
- 1 can Black Olives (each cut into 2 pieces)
- 1 can Fire-roasted Mild Mexican Green Chillies (small can)
- 1 teaspoon Salt
- 1 teaspoon Mexican Chili Powder
- 1 cup Sour Cream
- 2 tablespoons Olive or Avocado Oil
- 2 cups Grated Mexican or Cheddar Jack Cheese

- 1/4 cup Raisins
Directions
Step 1 | |
Place a medium non-stick frying pan on medium heat. | |

Add oil, then tomatoes. When tomatoes look a little fried, add raisins and 1/2 teaspoon salt. Stir-fry for a couple of minutes. | |

Add artichokes, olives, black beans, canned green chilies, 1/2 teaspoon salt and chili powder. Cook for 5 minutes. Lower heat to simmer. | |

Heat up one tortilla, either in the microwave oven (for 20 to 30 seconds) or in a skillet on the stove. Do not overheat the tortilla. When done, the tortilla should be soft and warm, but not rough or dried up. | |

Place the tortilla on a plate. Sprinkle 2 tablespoons of grated cheese. Place 2 tablespoons of the mix in one edge of the tortilla. Roll as tightly as possible. | |

Heat the burrito in the microwave for 20 seconds. Place the burrito on a serving platter. | |
Step 7 | |
Repeat steps 5 through 6 for the rest of the tortillas. | |
Step 8 | |
Serve the Burrito hot with guacamole and sour cream on the side. |
