When I was shopping in the Grocery Store, I found this package of Exotic Tomatoes consisting of a variety of colorful tomatoes, each of its own size and color. Later I found even the taste is varied. I was wondering about how I will cook them. The first thing that came to my mind is Italian Cuisine. And surely it turned out to be winner!

Ingredients
- 1 Package Linguine
- 2 cups Exotic Tomatoes (each cut into two)
- 1 head Garlic (separated, peeled and cut into small pieces)
- 2 Bell Peppers (cut into 1 inch pieces)
- 2 Onions (cut into 1 inch pieces)
- 6 tablespoons Olive oil
- 2 teaspoons Italian Blend Spice
- 2 teaspoons Salt
- 1 teaspoon Oregano
- 2 teaspoons Dry Parsley
- 1 teaspoon Black Ground Pepper
- 1/2 teaspoon Cayenne Pepper
- 2 quarts Water
Optional
- 1 teaspoon Dry Basil
- 4 Roma Tomatoes
Note
Serving Suggestions:
1) Serve hot with Linguine al dente.
2) You can mix the hot Linguine with the Veggie Medley right in the pan and serve.
Options:
1) If you cannot get the Exotic tomatoes, but you simply must use this recipe (!), just use 4 to 6 Roma Tomatoes. You can't lose either way! I promise.

Prepare the linguine according to package directions. | |

In the meanwhile, place a deep frying pan on medium heat. Add 4 tablespoons of oil. When oil is hot, add onion, bell peppers, garlic and half a teaspoon of salt. Stir fry until the onions are cooked but not mushy. | |
Step 3 | |
Add the exotic tomatoes, half a teaspoon salt and all the spices. Stir fry until the tomatoes look slightly fried and cooked. Add 2 more tablespoons of oil, if the mixture looks dry. | |
Step 4 | |
Serve hot with freshly cooked hot linguine. |
