Delicious Veggie Pulav Rice
A healthy, flavorful rice and veggie dish. It is vegetarian and vegan, and no sugar. Looks colorful and beautiful. Great for presentation. Can be mildly spiced or be made as spicy as you like. Very easy to make and so tasty to eat. Sorry, you can’t find any fault with this one!!

Ingredients
- 1 cup Basmati Rice
- 1 Package Frozen Carrots & Peas (2 cups, either just carrots and peas, or can contain other veggies too)
- 1 Package Frozen Cut Beans (2 cups)
- 1 Package Baby Lima Beans (1 cup)
- 4 - 6 Bay leaves
- 6 tablespoons Cooking Oil (Olive, Avocado or any other)
- 4 - 6 Cloves
- 2 Cardamoms in Shell
- 1/2 - 1 teaspoon Cayenne pepper
Optional
- 10 Cashews (broken into small pieces)
- 1 tablespoon Clarified Butter
Directions
Step 1 | |
Cook the Basmati Rice. Do not make it mushy. Using a rice cooker or pressure cooker is preferred. | |

Add a tablespoon of clarified butter or cooking oil to a non-stick frypan on low heat. Add the cashews and stir fry until golden brown. Do no burn the cashews. Transfer them to a small bowl. | |

Add 4 tablespoons of oil to the frypan. Increase heat to medium. When oil is hot, add the cloves, cardamoms and bay leaves. Stir fry for a minute. | |

Add the frozen veggies to the pan. Add 1 teaspoon salt and the cayenne pepper. Cook for 5 minutes or until the veggies are cooked but still firm. Do not make it mushy. Keep stirring every minute. | |
Step 5 | |
Add the cooked rice to the mixture. Add 1 teaspoon salt. Gently turn the mixture around. Mix thoroughly but without mashing the contents. | |
Step 6 | |
Add the cashews. Mix thoroughly. | |

Serve hot with a side dish. |
