Veggie Fruit Nut Salad
This salad is simple but delicious, very easy to make, tastes really delicious and it goes without saying that it is absolutely wholesome and healthy. It contains a few popular veggies, a little fruit and a few nuts. The dressing can be very simple or as complex as you want it to be. You can make a whole meal of this salad without any doubt, regret or misgivings.

Ingredients
- 1/2 head Iceberg Lettuce (broken into bite size pieces)
- 2 Small Carrots (shavings)
- 1 - 2 Small Tomatoes (cut into small cubes)
- 1 - 2 Small Cucumbers (persian, english or regular)
- 1 Apple (soft and sweet, cut into small cubes)
- 1/2 cup Walnuts (broken into small pieces)
- 1 tablespoon Lemon Juice
- 1 teaspoon Salt
- 2 - 4 tablespoons Olive Oil
- 1/2 can Pitted Black Olives
- 1 Small Slice or block Spicy Jack Cheese or Chili Jack Cheese (broken into small pieces or cubes)
Optional
- 1/2 cup Red or Yellow Onion (slivers)
- 1/4 cup Raisins
- 1/2 teaspoon Ground Black Pepper
- 1/4 cup Vegan Caesar Salad Dressing
- 1/2 cup Bread Croutons (Plain or Seasoned)
- 2 tablespoons Crisp tortilla strips salad toppers
Note
Serving Suggestions:
1) Serve salads as soon as you make them.
2) Serve them at room temperature or slightly cold depending upon your preference.
3) Add more salt, lemon juice or olive oil according to your taste preferences.
Options:
1) If you want to make the salad ahead of time and refrigerate it, just don't add the dressing items, such as salt, lemon juice, olive oil etc. Add these, or any dressing just before serving and mix thoroughly and serve immediately.
2) If you want to use a dressing bought from the grocery store, Vegan Caesar Dressing is one that tastes great with this salad.
3) If you are Vegan, skip the cheese.
