Spicy Rice Noodles Italian Style

Just a simple recipe using Rice Noodles, some veggies and some spices. It may be a simple dish, but it tasty, colorful and healthy. If you are Vegan, skip the cottage cheese.

Spicy Rice Noodles Italian Style

Ingredients

  • 1 - 2 packet Rice Noodles (depending upon package size)
  • 1 Onion (finely chopped)
  • 1 Bunch Green Onion (finely chopped)
  • 1 Bell Pepper (finely chopped)
  • 1 cup Pitted Black Olives (each sliced into two)
  • 1 - 2 cup Tomato Sauce (or Italian Sauce)
  • 1 teaspoon Italian Blend Spice
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Cayenne Pepper
  • 2 tablespoons Cooking Oil (Olive, Avocado or other)
  • 1 teaspoon Salt

Optional

  • 1 cup Cottage Cheese
  • 2 Sprigs Fresh Basil (just the leaves finely chopped)

Directions

Step 1

Place a non-stick pan on medium heat. Add oil.

Step 2

When oil is hot, add the veggies and 1/2 teaspoon salt. Stir fry until cooked.

Step 3

Add 1 cup sauce, olives and fresh basil. If you like it mild, add half the spices. If you like it tangy, add 1 more cup of sauce. Mix well and cook for 1 minute.

Step 4

In a small bowl, stir the cottage cheese and make it as creamy and blended as possible. Then add it to the mixture in the pan. Mix thoroughly. Cook for 1 minute. Set the heat to the lowest.

Step 5

Cook the rice noodles according to package directions. While cooking the rice noodles, add 1 teaspoon salt in the water.

Step 6

Add the cooked rice noodles to the fry pan. Turn around the contents gently without mashing the noodles. Mix thoroughly.

Step 7

Taste a little. If you like, add more salt, spices or sauce. Mix well.

Step 8
Serve hot.
