Just a simple recipe using Rice Noodles, some veggies and some spices. It may be a simple dish, but it tasty, colorful and healthy. If you are Vegan, skip the cottage cheese.

- 1 - 2 packet Rice Noodles (depending upon package size)
- 1 Onion (finely chopped)
- 1 Bunch Green Onion (finely chopped)
- 1 Bell Pepper (finely chopped)
- 1 cup Pitted Black Olives (each sliced into two)
- 1 cup Tomato Sauce (or Italian Sauce)
- 1 teaspoon Italian Blend Spice
- 1 teaspoon Ground Black Pepper
- 1 teaspoon Cayenne Pepper
- 2 tablespoons Cooking Oil (Olive, Avocado or other)
- 1 teaspoon Salt
Optional
- 1 cup Cottage Cheese
- 2 Sprigs Fresh Basil (just the leaves finely chopped)
