Spicy Veggie Pita Sandwich
When you put together a few aromatic and tasty vegetables, a little cooking oil, some herbs and spices, you get a nice filling for a sandwich. But if you like pita bread or pocket bread, then all you have to do is stuff this filling in your pocket bread. And now you have a wonderful, healthy sandwich, but different from the usual.

Ingredients
- 2 Pita breads (large ones, if possible, whole wheat or regular)
- 1 Onion (finely chopped)
- 1 Bell Pepper (finely chopped)
- 1 Tomato (finely chopped)
- 1 stick Celery (peeled, finely chopped)
- 1 Small Potato (with or without skin, finely chopped)
- 1 teaspoon Salt
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Ground Black Pepper
- 1 teaspoon Cumin Powder
- 1 teaspoon Coriander Powder
- 4 tablespoons Olive Oil (or Avocado oil, or any cooking oil)
Optional
- 4 cloves Garlic (finely chopped)
- 2 tablespoons Cilantro (finely chopped)
- 1 cup Grated Cheese (Mozarella, Spicy Jack, Provolone)
Note
Serving Suggestions:
1) Serve hot.
2) Serve with a side of fruit or chips.
Options:
1) If you are Vegan, skip the cheese.
