Lite Veggie Lunch

Why should a burger patty always be enclosed in buns or rolls? Sometimes, when a light lunch is preferred, here is a recipe that you may like. This recipe can be as bland or as spicy as you like. If you are Vegan, skip the cheese slices.

Ingredients

  • 2 Veggie Burger Patties
  • Crisp Lettuce
  • 1 Small Onion (Yellow or Red, very thinly sliced)
  • 1 - 2 Tomatoes (thinly sliced)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Cayenne Pepper
  • 2 Slices Cheese (spicy or regular)
  • 6 tablespoons Olive or Avocado oil

Optional

  • 1 Avocado (pitted, thinly sliced)
  • 1/2 Cucumber (peeled, thinly sliced)

Directions

Step 1

The veggie burger patties should be cooked until they look golden brown on both sides. The steps are as follows.

Place a non-stick frypan on medium heat. Place 2 tablespoons of cooking oil. Spread the oil in the middle of the pan.

Step 3

Place the 2 veggie burger patties on the frypan over the oiled surface. The bottom surface of the patties should now be thoroughly covered by oil. Cook for 1 minute. The patties should not burn. If necessary, lower the heat.

Step 4

Place a few drops of oil on top of the patties. Spread it. Using a flat non-stick spatula, carefully turn the patties over. Don't break the patties. Cook for 1 minute.

Step 5

Most burger patties come salted. If they are not salted, sprinkle a little salt on top. If you like it spicy, sprinkle a pinch of cayenne pepper or black pepper on top of the patties. Carefully turn the patties over. Cook for 1 more minute.

Step 6

If you like it hot, once again sprinkle cayenne pepper or black pepper on top of the patties. Carefully turn the patties over. Cook for 1 more minute.

Step 7

Cook the patties until done. Do not overcook.

Step 8

On a platter, place the veggies. Sprinkle salt and some olive oil or avocado oil on top of the veggies.

Step 9

On a serving plate, place the hot veggie burger patties. Top them with cheese slices, tomato, onion, cucumber and avocado slices.
