Just a simple recipe using Rice Noodles, some Vegetables and some Mexican spices. It is delicious, beautiful and healthy. Very easy to prepare.

- 1 - 2 packet Rice Noodles (depending upon package size)
- 1 Onion (finely chopped)
- 1 Bell Pepper (finely chopped)
- 1/2 cup Cilantro (finely chopped)
- 1 - 2 teaspoon Mexican Chili Powder
- 2 - 3 cups Mixed Vegetables (Frozen) (containing corn niblets, carrots, peas, string beans, lima beans etc.)
- 1 teaspoon Salt
- 4 tablespoons Cooking Oil (olive, avocado or other)
- 1 tablespoon Lemon juice
- 2 tablespoons Salsa
