Long Green Bean Spicy Curry

If you feel like having a variation to the usual string beans, you will like these. These are like string beans, but they have a slightly different flavor of their own. The spices make this dish even more tasty and interesting.

Ingredients

  • 1 bunch Long Green Bean (Sometimes called 'chinese long beans'; cut into 1/2 inch pieces)
  • 1 Dried Red Chillies
  • 1 teaspoon Salt
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad Dahl
  • 1 teaspoon Channa Dahl
  • 2 tablespoons Oil (Olive, Avocado or Other)

Optional

  • 1 /2 - 1 teaspoon Hing (Asafoetida)
  • 1/2 teaspoon Turmeric
  • 1/2 cup Fresh Grated Coconut (unflavored)
  • 6 - 8 leaves Curry Leaves

Directions

Step 1

Place a frypan on medium heat. Add oil.

Step 2

When oil is hot, add the mustard seeds. When they just about start crackling, add the red chillies, urad dahl and channa dahl. Stir fry a little with a flat spatula. Partially cover the frypan so that the mustard seeds mostly crackle within the frypan. Don't cover completely.

Step 3

When the urad and channa dahl look fried golden brown, set the heat to Low. Add the long green beans. Mix the contents.

Step 4

Add the salt, turmeric, curry leaves and hing. Sprinkle 4 tablespoons of water. Mix thoroughly.

Step 5

Turn the heat up to Medium. Cover and cook for 4 minutes, or until the beans are cooked, but still firm. Stir the contents every minute. If the beans appear too dry or burning, add 2 tablespoons of water and mix. Do not overcook.

Step 6

Add the grated coconut to the frypan. Mix thoroughly. Stir fry uncovered for 1 minute.

Step 7
Serve hot.
