Tasty Okra Curry

This recipe for Tasty and Beautiful Okra Curry should change all your preconceived notions about “The Goopy Okra” from a frozen Okra package. It is all in the wrist, i.e., how often you stir the dish ! Seriously, stir-frying on high or medium-high heat contributes to drying up the sticky substance. Mildly spiced and stir-fried, it becomes a tasty dish, not to mention that it is very healthy too.

Of course, if you get fresh Okra, it will be much easier to cook because there will be much less sticky substance. In addition, it will taste better too. However, if fresh Okra is not easy to get, then frozen Okra will do just fine.

Mildly Spiced Okra Curry

Ingredients

  • 1 Large Frozen Okra Package (Or fresh Okra chopped - see picture.)
  • 1 - 2 Large Red Chili (Dried Serrano Pepper)
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Turmeric
  • 1 teaspoon Urad Dahl
  • 1 teaspoon Salt
  • 2 - 4 tablespoons Olive, Avocado or Sesame Oil

Directions

Step 1
Place a non-stick frying pan on medium heat. Add oil.

When oil is hot, add mustard seeds.

Add urad dahl.

Add Red Chili Pepper(s).
Step 5
When urad dahl is golden brown, add frozen okra, turmeric powder and salt. Mix well. Do not cover the pan. Keep the heat high so that the sticky, goopy liquid gets dried. Keep stirring every minute or two so that okra does not get burnt. Cook until okra is cooked but not mushy.
Step 6
Serve hot as a side dish with anything.
