Green and Black Bean Galore

This is a simple Mexican vegetable dish that uses string beans and black beans. It can be used with rice or wheat/corn tortillas. It is very easy to make. It is healthy, colorful and delicious. It can be made mild for kids – just don’t add the spice.

Ingredients

  • 1 Large package Frozen Cut Beans
  • 1 can Cooked Black Beans
  • 1 Large Onion (finely chopped)
  • 1 Bell Pepper (chopped into small pieces)
  • 4 - 6 tablespoons Olive, Avocado or Sesame Oil
  • 1 - 2 teaspoon Salt
  • 1 - 2 teaspoon Mexican Chili Powder
  • 4 cups Water
  • 1/8 cup Cilantro (finely chopped)
  • 2 Roma Tomatoes (finely chopped)
  • 1 - 2 tablespoon Medium or Hot Salsa

Directions

Step 1
Add frozen string beans to a microwaveable bowl. Add water until the vegetable is immersed. Add 1 teaspoon salt. Cook for 8 minutes. Use a toothpick to check. Beans must be cooked but firm. Drain in a colander.
Step 2
Add oil to a medium frying pan. When oil is hot, add onion and bell pepper. Fry for 5 minutes or until onion is cooked.
Step 3
Add the cooked string beans to the frying pan. Add the Mexican chili powder and 1/2 teaspoon salt. Mix and cook for 2 minutes.
Step 4
Add the black beans to the frying pan. Add the chopped cilantro, tomatoes and salsa as well. Add a few tablespoons of water, to make it like a stew. Mix all the ingredients. Cook for 3 more minutes.
Step 5
Serve hot with wheat or corn Tortillas or a bed of steamed white rice.
