Potato Wedges Nacho Style
Potato wedges, baked and hot, is irresistible for most of us. Even a sprinkle of salt is usually enough to make it delectable. However, this recipe has made these potato wedges even more fantastic by adding a Nacho Style to it. Baked instead fried potatoes, refried beans, veggies, olives and cheese sauce make it a little healthy too.

Ingredients
- 1 Large Package Potato Wedges (natural with skin, frozen)
- 1 can Vegetarian Refried Beans (8 oz. can)
- 2 cups Chunky Salsa (mild, medium or hot)
- 1 Tomato (diced)
- 1 cup Green Onion (finely chopped)
- 1/2 cup Sliced Black olives
- 1 tablespoon Sour Cream
- 2 tablespoons Butter (or ghee)
- 2 tablespoons All purpose flour (Maida)
- 1 cup Milk
- 2 cups Cheddar Cheese
Optional
- 1/2 cup Fire Roasted Green Chillies (4 oz. can, finely chopped)
Directions
Baking Potatoes | |
Step 1 | |
Bake potato wedges according to package directions. | |
Making Cheese Sauce | |
Step 2 | |
When potatoes are ready remove from oven. Place melt butter or ghee in a saucepan over medium heat. Add flour and mix until smooth. Pour milk into butter mixture. Cook and stir for 3 minutes, or until mixture thickens. | |

Add cheddar cheese and stir for 2 minutes, or until cheese is melted. Mix well. | |
Preparing Potatoes Nacho Style | |
Step 4 | |
Place refried beans in a bowl, cover and microwave for 30 seconds. | |
Step 5 | |
On a large serving platter, arrange the potato wedges in a spiral fashion. Top with refried beans. | |
Step 6 | |
Pour as much salsa as you like on top. Then pour the cheese sauce over it. Sprinkle diced tomatoes, chopped green onions, fire roasted green chillies and sliced olives on top. Garnish with sour cream. | |
