Delightful Easy Spanish Rice
If you are a rice lover, you will be thrilled by this item! If you like it spicy too, you are in heaven! This Spanish/Mexican dish is simply delectable. And it is pretty easy to prepare. I mean, there are a few simple steps, but hey, when you think of the reward you will get, the effort is worth it! You may want to include this when you are giving a party. I honestly believe that it will be a hit.

Ingredients
- 1 cup Long Grain White Rice
- 1 - 2 Onion (finely chopped)
- 1 Bell Pepper (finely chopped)
- 2 Tomatoes (finely chopped)
- 4 tablespoons Cooking Oil
- 1 can Fire Roasted Diced Green Chillies (4 oz. can)
- 1/2 - 1 teaspoon Mexican Chilli Powder
- 1/2 cup Cilantro (finely chopped)
- 1 teaspoon Salt
- 1 tablespoon Lemon Juice
- 4 cups Water
Optional
- 1 Green Chilli (serrano pepper)

Place a medium to large non-stick pan with a little depth on medium heat. I like to use pans that have enough space to turn the contents around and stir fry easily. This way the contents pretty much stay in the pan instead scattering all around the pan! See pictures. | |

Add 3 tablespoons of oil, onion, bell pepper and 1/2 teaspoon salt. Add the green chilli (serrano pepper) too, if you like. (Some like it hot!). | |

Stir fry with a non-stick spatula until the vegetables are cooked. | |

Add the tomatoes. Leave a tablespoon of cilantro aside for garnishing. Add the rest to the pan. | |

Add 1/2 teaspoon salt, mexican chilli powder and fire-roasted green chillies. Mix well and cook for 2 minutes. | |

Add the cooked rice and the lemon juice (if you like it tangy). Add the remaining one tablespoon of cooking oil. Mix and turn around the contents gently with the spatula. Don't mash the rice (unless you like it mushy). | |
Step 8 | |
Garnish with the cilantro set aside. | |

Serve hot with a dollop of sour cream, and/or some guacamole on the side. |
