Apricot Smoothie Dessert

Ingredients

  • 4 cups Vanilla Yoghurt (low fat)
  • 2 cans Apricot halves (or 4 cups of fresh ripe apricots halves)
  • 4 - 8 tablespoons Sugar (or sugar substitute as necessary)
  • 1 cup Blueberries (fresh)
  • 1 cup Strawberries (fresh, sliced thin)
  • Mint leaves (garnish)

Note

Options:
1) If you cannot get Vanilla Yoghurt, use plain yoghurt and 1 teaspoon of vanilla extract.
2) If you can't use sugar, use a sugar substitute.

Directions

Step 1
Drain the apricots. Place apricots in a blender or food processor. Blend until smooth.
Step 2
In a large bowl, combine apricot purée, vanilla yoghurt and sugar or sugar substitute. Mix thoroughly.
Step 3
Cover and chill for at least 30 minutes.
Step 4
To serve, first spoon a few blueberries into tall glasses, wine glasses or dessert dishes.
Step 5
Then spoon the apricot smoothie over the blueberries.
Step 6
Then spoon some of the sliced strawberries.
Step 7
Spoon again the apricot smoothie over the strawberries.
Step 8
Top each each glass with a couple of strawberry slices and garnish with a mint leaf.
Step 9
Serve cold.
