Veggies, Black Beans, Spices Medley
This recipe is basically a medley of vegetables, salsa and Mexican spices. You can make this dish as mild, or as hot and spicy as you like. It will taste great either way.

Ingredients
- 1 Tomato (finely chopped)
- 1 Bell Pepper (finely chopped)
- 4 - 6 cloves Garlic (finely chopped)
- 1 Onion (finely chopped)
- 1 - 2 teaspoon Mexican Chili Powder
- 1 can Cooked Black Beans
- 1/4 - 1/2 cup Salsa (mild, medium or hot)
- 1 teaspoon Salt
- 4 - 8 tablespoons Cooking Oil (olive, avocado or other)
- 1/4 cup Cilantro (finely chopped)
Note
Serving Suggestions:
1) Serve hot on a bed of hot fluffy rice.
2) Use as a filling for a tortilla.
3) Serve with a side of salad and/or sour cream.
Options:
1) Whether you use it with cooked rice or as filling in a tortilla, you can add Mexican blend grated cheese to it.
2) If you are Vegan, skip the cheese and sour cream.
Directions
Step 1 | |
Place a frypan or sauce pan on medium heat. Add oil. | |

Add the onion, bell pepper and 1/2 teaspoon salt. Cook for 5 minutes or until veggies are cooked. | |

Add the garlic and cook for 5 more minutes, or until garlic is cooked. | |
Step 4 | |
Add the tomato, chili powder and 1/4 cup salsa. Mix and cook for 3 minutes. | |
Step 5 | |
Drain the black beans. Add the black beans, cilantro and 1/2 teaspoon salt to the frypan with the veggies mixture. Mix thoroughly. | |
Step 6 | |
If it looks too dry, add 2 to 4 tablespoons of water. Mix thoroughly. | |
Step 7 | |
Serve hot on a bed of hot cooked rice, or as filling in a tortilla. | |
