Spicy Tangy Veggie Rotini Pasta

Here is a delicious Rotini recipe with a spicy sauce and aromatic herbs. Add some creamy cottage cheese if you like the sauce creamy, or skip it if you don’t. Either way, you will love this dish because it has great tasting pasta and the goodness of vegetables and spices. A healthy, satisfying dish.

Spicy Tangy Rotini Pasta

Ingredients

  • 2 cups Rotini Pasta (cooked according to package directions)
  • 1 Onion (finely chopped)
  • 4 - 6 cloves Garlic (finely chopped)
  • 1 Bell Pepper (finely chopped)
  • 1 Carrots and Peas (frozen, small package)
  • 1 Italian Cut Beans (frozen, small package)
  • 8 - 16oz Tomato Sauce (canned)
  • 1/2 teaspoon Ground Black Pepper
  • 1/2 teaspoon Cayenne Pepper
  • 1 teaspoon Italian spice blend
  • 1 teaspoon Salt
  • 6 - 8 tablespoons Olive Oil
  • Water

Optional

  • 1/2 teaspoon Oregano
  • 1 cup Cottage Cheese
  • 1/2 cup Grated Parmesan Cheese (fresh)

Note

Serving Suggestions:

1) Serve hot with bread or garlic toast on the side.
2) You can serve the rotini pasta and sauce separately.

Options:

1) If you are Vegan, skip the cottage cheese.
2) If you don't have tomato sauce, you can use 4 ounces of tomato paste and 1 to 2 cups of water.

Directions

Step 1

Place the frozen carrots and peas, 2 cups of water and 1 teaspoon salt in a microwaveable bowl and cook for 6 to 8 minutes, or until cooked but still firm. Drain in a colander.

Step 2

Place a deep frypan on medium heat. Add oil. Add chopped onion and bell pepper. Add 1/2 teaspoon salt. Stir fry for 3 minutes.

Step 3

Add garlic. Cook for 2 more minutes or until the veggies are cooked.

Step 4

Add the frozen beans, 1/4 cup water and 1/2 teaspoon salt. Cook for 5 minutes or until the beans are cooked. If too dry, add a little more water.

Step 5

Add the cooked carrots and peas, the tomato sauce, 1/8 cup water and the spices. If you like it really tangy, add more tomato sauce. If the tomato sauce does not already have salt, add 1/2 teaspoon salt.

Step 6

Mash the cottage cheese in a bowl or blend it with a hand blender. Add it to the sauce.

If the sauce is too thick, add a few tablespoons of water. Mix well. See pictures of the sauce.
Step 8

Add the cooked rotini pasta to the frypan. Mix thoroughly. Check for taste and, if you like, add more salt and spices. Mix well.

Add the grated parmesan cheese. Mix thoroughly. Remove the pan from stove.
