Ingredients
- 2 cups Rotini Pasta (cooked according to package directions)
- 1 Onion (finely chopped)
- 4 - 6 cloves Garlic (finely chopped)
- 1 Bell Pepper (finely chopped)
- 1 Carrots and Peas (frozen, small package)
- 1 Italian Cut Beans (frozen, small package)
- 8 - 16oz Tomato Sauce (canned)
- 1/2 teaspoon Ground Black Pepper
- 1/2 teaspoon Cayenne Pepper
- 1 teaspoon Italian spice blend
- 1 teaspoon Salt
- 6 - 8 tablespoons Olive Oil
- Water
Optional
- 1/2 teaspoon Oregano
- 1 cup Cottage Cheese
- 1/2 cup Grated Parmesan Cheese (fresh)
Note
Serving Suggestions:
1) Serve hot with bread or garlic toast on the side.
2) You can serve the rotini pasta and sauce separately.
Options:
1) If you are Vegan, skip the cottage cheese.
2) If you don't have tomato sauce, you can use 4 ounces of tomato paste and 1 to 2 cups of water.
