Easy Healthy Zucchini Casserole
Zucchini squash does not have much flavor. But sometimes you need a vegetable like that so that you can enjoy a simple, plain dish without much spices or herbs. On the other hand, if you prefer, it also lends itself to various kind of spices, and even cheeses. This recipe is very easy, healthy and tasty.

Ingredients
- 4 Zucchini
- 6 - 8 tablespoons Olive Oil (or Avocado Oil or any cooking oil)
- 1 teaspoon Salt
- 1 teaspoon Cayenne Powder
- 1 - 2 cup Grated Cheese (Mozzarella or Pepper Jack)
Optional
- 1 teaspoon Coriander Power
Directions
Step 1 | |
Cut each zucchini into four parts. To do this, first cut each zucchini across once, then cut each of the 2 sections lengthwise once. See the pictures. | |

Preheat the oven to Low Broil Setting. | |

Place a large nonstick frypan on medium heat. Add 4 tablespoons oil. When hot is heated up, add the zucchini pieces in one layer. If there are extras, place them on top of the first layer. Sprinkle 1/2 teaspoon salt as evenly as possible on the zucchini pieces. Cover and cook for 2 minutes. | |

Lower the heat. Add 2 to 4 tablespoons of oil as evenly as possible, on top of the zucchini pieces. If you like, sprinkle 1/2 teaspoon of coriander powder and 1/2 teaspoon of cayenne powder, as evenly as possible on top of the zucchini pieces. | |

Using a flat spatula, carefully turn the zucchini pieces over, one by one. | |
Step 6 | |
Sprinkle 1/2 teaspoon salt as evenly as possible on the zucchini pieces. If you like, sprinkle 1/2 teaspoon of coriander powder and 1/2 teaspoon of cayenne powder, as evenly as possible on top of the zucchini pieces. Cook uncovered for 2 minutes. | |

Using the flat spatula, carefully turn the zucchini pieces over one more time, one by one. Cook for 1 minute. | |
Step 8 | |
Repeat Step 7 until the zucchinis are cooked but still very firm. Insert a toothpick in one of the zucchini pieces to check if it is cooked. Do not overcook. | |

Using a tablespoon of cooking oil, grease a large rectangular casserole dish. Place the zucchini pieces in a single layer in the casserole dish. See pictures. | |
Step 10 | |
Sprinkle the grated cheese on top, evenly on all the zucchini pieces. | |

Place the casserole dish in the middle rack of the oven set to Low Broil. | |
Step 12 | |
Check after every minute. When the zucchini tops are broiled to golden brown, switch off the oven. Immediately remove the casserole dish to the counter top or table top. | |

Serve hot on a bed of steamed rice or by itself as a side dish. |
