Veggie Feta Linguini

Sometimes I like Spaghetti and plain or spicy marinara sauce. Nothing else to distract my encounter with this beautiful Italian meal! But on the other hand, when I want to eat healthy and have some variations, I love mixing vegetables with pasta.

Italian spices and pasta lend themselves to any kind of cuisine. Using vegetables makes the dish tasty and healthy. Spices add character and medicinal values to the dish. Adding Feta Cheese instead of the usual Italian cheeses gives a unique, interesting, tangy, delicious taste to the Linguini dish, sort of a Greek twist! What else do you need in life!!

Ingredients

  • 1/2lb Linguini (1/2 package)
  • 1 Small Package Frozen Italian Cut Beans (these are large double beans)
  • 1 - 2 cup Fresh Carrots (peeled and cut into 1/2 inch pieces)
  • 1 cup Broccoli (flowerlets and tender stems - peel or trim off hard skin)
  • 1 cup Shelled Edamame Beans (green soy beans)
  • 1 - 2 cup Frozen Peas
  • 1 Onion (chopped)
  • 2 Roma Tomatoes (cut into 1/2 inch pieces)
  • 4 - 8 cloves Garlic (finely chopped)
  • 1 teaspoon Salt
  • 4 - 6 tablespoons Olive Oil
  • 1/2 - 1 cup Feta Cheese
  • 1 teaspoon Italian Blend Spice
  • 1/2 - 1 teaspoon Ground Black Pepper
  • 1 teaspoon Oregano (dry spice)
  • 6 - 8 cups Water

Optional

  • 1/2 - 1 teaspoon Cayenne Pepper
  • 1 teaspoon Basil (dry spice)
  • 1/2 cup Water chestnuts (sliced)

Note

Options:
1) If the Edamame beans and Green peas are fresh and not frozen, cook them separately immersed in water with one teaspoon of salt, either in a pan or microwave oven until they are cooked, but firm. Then add them at the end to the mixture in the pan and mix thoroughly.
2) I used a frozen vegetable medley package that had broccoli, water chestnuts and carrots.

Directions

Step 1
Prepare Linguini according to package directions.
Step 2
In the meanwhile, place a large, deep, non-stick frying pan on medium heat. Add oil. When oil is hot, add onion and garlic together. Cook for 5 minutes or until cooked. Add tomatoes and cook for 2 more minutes.
Step 3
Add Italian cut beans, carrots and frozen edamame (see Note). Cook for 5 minutes, or until about half-cooked.
Step 4
Add broccoli and cook for 2 more minutes. Add frozen peas (see Note). Add 1 teaspoon salt and spices. Cook for 2 more minutes, or until vegetables are cooked but firm. Do not overcook.
Step 5
Drain the linguini. Add it to the mixture in the frying pan. Mix well.
Step 6
Add Feta Cheese to the pan and mix thoroughly.
Step 7
Serve hot.
