Penne Pasta in Creamy Sauce
Sometimes simple recipes give the most satisfaction. This Italian dish is so easy to make that you may underestimate its value. It is tasty, pretty and healthy. It is not loaded with calories. It can be used for a light lunch by itself, or it can be made into an attractive dinner item with delicious side dishes. Needless to say, it is a winner.
Penne Pasta in Creamy Sauce

Ingredients
- 2 cups Penne Pasta (Cooked according to package directions)
- 2 - 4 Roma Tomatoes (chopped)
- 2 cups Cottage Cheese
- 1/2 cup Kraft Parmesan Cheese (Or any finely grated Parmesan cheese)
- 1/8 cup Milk
- 2 tablespoons Olive Oil (Or any cooking oil)
- 1 cup Mozzarella Cheese (grated)
- 1/4 teaspoon Salt
- 1/4 - 1/2 teaspoon Cayenne Pepper (Or you can use black pepper)
- 8 cups Water
Optional
- 1 teaspoon Italian blend spice
Directions

Cook Penne Pasta according to package directions. | |

If using a blender, place cottage cheese, parmesan cheese, milk, salt and spice in the blender and blend until smooth. | |

If using a hand mixer, place these ingredients in a medium bowl and blend until smooth. | |

Place a non-stick fry pan on medium heat. Add oil, tomatoes and the cayenne pepper. Fry a little until tomatoes are cooked. | |

Reduce the heat to low. Add the blended creamy ingredients to the pan. Stir and cook for about 5 minutes. | |

Place a serving of cooked pasta on a plate. Top it with the creamy sauce. | |
Step 7 | |
Sprinkle with grated Mozarella cheese. Microwave until cheese it slightly melted. | |
Step 8 | |
Serve hot with garlic toast or toasted sourdough bread as side dishes. |
