Ingredients
- 4 Large Russet Potatoes (washed and chopped into 1 inch pieces)
- 2 Onion (chopped)
- 1/8 cup Cilantro (finely chopped)
- 4 - 6 tablespoons Oil
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Salt
Directions
Step 1 | |
Place medium frying pan on medium heat. Add oil. | |

Add onions and 1/2 teaspoon salt. Stir fry until onions are glazed. | |

Add potatoes and 1/2 teaspoon salt. Stir fry and cook for 10 minutes, stirring gently every two minutes. Cook until potatoes are golden brown and cooked. Don't mash the potatoes. | |
Step 4 | |
Add cayenne and cilantro. Mix well. Stir fry for a minute. | |
Step 5 | |
Serve hot. |
