Zucchini Squash Stir Fry

This recipe is so easy and healthy that you would want to make use quite often. Zucchini is a versatile vegetable which is quite bland. But that is exactly what is sometimes convenient because you can prepare it in a variety of ways by changing the spices. It is like having a blank canvas you can paint on depending upon your mood. This recipe is a simple stir fry using a couple of spices.

Zucchini Squash Stir Fry

Ingredients

  • 2 - 4 Red Chillies
  • 4 - 6 Large Zucchinis (Cut into 1 inch cubes)
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Channa Dahl
  • 1 teaspoon Urad Dahl
  • 1 teaspoon Turmeric
  • 1 - 2 teaspoon Salt
  • 4 - 6 tablespoons Olive, Avocado or Sesame Oil
  • 2 tablespoons Cilantro (finely chopped)

Note

Options:
1) If you cannot get Zucchini squash in your area, you can use any green squash available.
2) Increase or reduce salt and chillies according to your taste.

Directions

Step 1
Place non-stick fry pan on medium heat. Add oil.
Step 2
When oil is heated, add urad dahl, channa dahl, cumin and red chillies. Stir fry with a flat non-stick spatula for a minute, or until the channa dahl and urad dahl are golden brown.
Step 3
Add cut zucchini pieces. Add turmeric and one teaspoon salt. Stir fry and cook for 5 minutes uncovered. Stir every minute. Add cilantro and mix well without mashing the zucchini.
Step 4
Check with a tooth pick. When Zucchini is cooked but still firm remove pan from stove.
Step 5
Serve hot as a side dish.
