Ingredients

  • 1 cup Basmati Rice (Cooked according to Recipes on this website)
  • 1 - 2 cup Sun-dried or Oven-dried Tomatoes (julienne cut)
  • 1 cup Small Cherry Tomatoes used for salad
  • 1/4 - 1/2 teaspoon Cayenne Pepper (spice)
  • 1/4 - 1/2 teaspoon Ground Black Pepper (spice)
  • 1/2 teaspoon Turmeric (color and flavor)
  • 1 teaspoon Salt (taste)
  • 4 - 6 tablespoons Olive, Avocado or Sesame Oil

Optional

  • 2 tablespoons Cilantro (finely chopped - color, flavor and taste)

Directions

Step 1
Add 4 tablespoons oil to a non-stick, medium sized, slightly deep fry pan and place it on medium heat.
Step 2
Add sun-dried tomatoes and spices. Mix with a flat spatula. Cook for 3 minutes.
Step 3
Add the cherry tomatoes and salt. Stir fry for two more minutes or until tomatoes are glazed or slightly fried but still unbroken.
Step 4
Add the cooked basmati rice to the mixture. Add turmeric. Mix gently but thoroughly without mashing the contents.
Step 5
Serve hot with steamed or stir-fried vegetables and Raita or cottage cheese on the side.
