Sun-dried Tomato Rice

Ingredients
- 1 cup Basmati Rice (Cooked according to Recipes on this website)
- 1 - 2 cup Sun-dried or Oven-dried Tomatoes (julienne cut)
- 1 cup Small Cherry Tomatoes used for salad
- 1/4 - 1/2 teaspoon Cayenne Pepper (spice)
- 1/4 - 1/2 teaspoon Ground Black Pepper (spice)
- 1/2 teaspoon Turmeric (color and flavor)
- 1 teaspoon Salt (taste)
- 4 - 6 tablespoons Olive, Avocado or Sesame Oil
Optional
- 2 tablespoons Cilantro (finely chopped - color, flavor and taste)
Directions

Add 4 tablespoons oil to a non-stick, medium sized, slightly deep fry pan and place it on medium heat. | |

Add sun-dried tomatoes and spices. Mix with a flat spatula. Cook for 3 minutes. | |

Add the cherry tomatoes and salt. Stir fry for two more minutes or until tomatoes are glazed or slightly fried but still unbroken. | |

Add the cooked basmati rice to the mixture. Add turmeric. Mix gently but thoroughly without mashing the contents. | |
Step 5 | |
Serve hot with steamed or stir-fried vegetables and Raita or cottage cheese on the side. |
