Whole Grain Penne Pasta

This recipe using whole grain penne pasta is really very easy.  It is healthy and very tasty. When you want a quick lunch or dinner this recipe may come in handy. It is bound to be popular with kids, and it is a good way of introducing vegetables and spices to them.

Ingredients

  • 2 cups Whole grain Penne Pasta
  • 1 Bell Pepper (chopped)
  • 1 Onion (chopped)
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad dahl
  • 1 teaspoon Saslt
  • 1 Small Green Chili (Serrano Pepper) (make a small slit in it without slicing it)
  • 4 tablespoons Olive, Avocado or Sesame Oil
  • 2 teaspoons Lemon Juice

Directions

Step 1
Cook the pasta according to package directions.
Step 2
Place a medium non-stick wok or pan on medium heat.
Step 3
Add oil. When oil is heated, add mustard seeds and urad dahl.
Step 4
When mustard seeds crackle rapidly or the urad dahl is golden brown, add the green chili. Stir fry a little for about 30 seconds.
Step 5
Add the bell pepper, onion and half a teaspoon salt. Stir fry and cook until the vegetable are glazed and slightly fried.
Mix thoroughly.
Step 6
Add the cooked Penne pasta to the wok or pan. Add the lemon juice and half a teaspoon salt.
Step 7
Serve hot.
