Zucchini Squash Stir Fry

This recipe is a simple stir fry using a couple of spices.

Ingredients
- 2 - 4 Red Chillies
- 4 - 6 Large Zucchinis (Cut into 1 inch cubes)
- 1 teaspoon Cumin Seeds
- 1 teaspoon Channa Dahl
- 1 teaspoon Urad Dahl
- 1 teaspoon Turmeric
- 1 - 2 teaspoon Salt
- 4 - 6 tablespoons Olive, Avocado or Sesame Oil
- 2 tablespoons Cilantro (finely chopped)
Note
Options:
1) If you cannot get Zucchini squash in your area, you can use any green squash available.
2) Increase or reduce salt and chillies according to your taste.
Directions
Step 1 | |
Place non-stick fry pan on medium heat. Add oil. | |

When oil is heated, add urad dahl, channa dahl, cumin and red chillies. Stir fry with a flat non-stick spatula for a minute, or until the channa dahl and urad dahl are golden brown. | |

Add cut zucchini pieces. Add turmeric and one teaspoon salt. Stir fry and cook for 5 minutes uncovered. Stir every minute. Add cilantro and mix well without mashing the zucchini. | |
Step 4 | |
Check with a tooth pick. When Zucchini is cooked but still firm remove pan from stove. | |
Step 5 | |
Serve hot as a side dish. |
