Onions in Tangy Sauce

Onions have great flavor, they are good for health and they add taste and aroma to any dish. This sauce or gravy or stew is typically used on a bed of white long grain or basmati rice. But this can also be used a condiment or side dish to any suitable main dish.

Onions in Tamarind Sauce

Ingredients

  • 1 Large White Onion (Chopped into tiny pieces)
  • 1 - 2 tablespoon Oil
  • 1 teaspoon Tamarind Paste
  • 1 teaspoon Salt
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Urad Dahl
  • 1 teaspoon Mustard Seeds
  • 1/2 teaspoon Cayenne Pepper
  • 4 - 6 leaves Curry Leaves
  • 1/8 cup Cilantro (Finely Chopped)
  • 4 cups Water

Optional

  • 1 - 2 teaspoon Rice Flour (To thicken the sauce, available in Indian Grocery Stores)
  • 1/2 teaspoon Hing (Available in Indian Grocery Stores)

Directions

Step 1
Place non-stick fry pan on medium heat. Add oil.
Step 2
When oil is hot, add mustard seeds and urad dahl. Keep stirring with a flat non-stick spatula.
Step 3
When mustard seeds crackle, and the urad dahl is golden brown, add the chopped onion. Add 1/2 teaspoon of salt.
Step 4
Stir fry until the onion is glazed and cooked well.
Step 5
Add water and 1/2 teaspoon salt.
Step 6
Add turmeric, cayenne pepper, tamarind paste, curry leaves and hing.
Step 7
Ladle some of the liquid, just the liquid alone, about 1/2 cup, from the pan into a bowl. Cool it. Add the rice flour to the cooled liquid in the bowl and mix well.

Step 8
Add the rice mixture back into the onion mixture in the pan on the stove. Add the chopped cilantro.
Step 9
Mix well and cook in medium to high heat for 5 more minutes.
Step 10
Serve hot as a sauce or gravy on a bed of rice, or as a side dish for Dosa's and Idli's.
