Besides being commended as green and beautiful, Broccoli is also healthy and nutritious. Raw, steamed or even slightly salted Broccoli may not be really enticing, especially in cultures where the staple food is meat. Its flavor can even be disagreeable to many people. But Broccoli can be delicious with just a little bit of help from a couple of aromatic spices. It may seem hard to believe, but it is amazing what just a little spice can do to a boring dish. Try it yourself! What do you got to lose, except perhaps a few pounds because of eating this vegetable that has very few calories!

Ingredients

  • 4 cups Broccoli Spears (Fresh broccoli cut into pieces, or a large package of frozen broccoli cuts.)
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Urad Dahl
  • 1 - 2 Red Chillies
  • 1 teaspoon Salt
  • 2 - 4 tablespoons Cooking Oil
  • 1/4 cup Water

Directions

Step 1
Place a large non-stick fry pan on medium heat.
Step 2
Add oil to the pan. When oil is hot, add cumin seeds and urad dahl.
Step 3
Broccoli will not absorb too much heat from chillies. So if you like it mild but would prefer to have a little chilli flavor, add one whole red chilli in the pan. Otherwise, break one or both chillies into two and add them to the pan.
Step 4
Stir the contents with a non-stick spatula until the urad dahl is golden brown. Do not fry too much.
Step 5
Lower the heat. Add the cut broccoli to the pan.
Step 6
Broccoli does not take too much salt. Add 1/2 or 3/4 teaspoon salt first. Sprinkle a little water on top. Mix the contents well.
Step 7
Increase heat to medium. Cover and cook for 5 minutes, stirring the contents every minute. If the contents seem to burn, sprinkle a little water.
Step 8
Cook until the broccoli is cooked but firm. Do not overcook. It is better that the broccoli is half-cooked than overcooked.
Step 9
Check for salt. If necessary, add 1/4 teaspoon more salt at a time and check again.
Step 10
Serve hot.
