Artichoke Veggie Medley

Artichoke is a very tender and mild tasting vegetable. Whether it is used in a salad, soup, stew or a stir-fried vegetable mix, it adds its own unique taste and appearance. In this tasty dish, several sauteed blend well, even though each has its own unique flavor and taste.

Ingredients

  • 8 Chunks Artichoke Hearts (see picture)
  • 1 Onion (cut into 1 inch chunks)
  • 1 Bell Pepper (cut into 1 inch chunks)
  • 2 cups Eggplant (cut into 1 inch chunks)
  • 1 Tomato (cut into 1 inch chunks)
  • 1 teaspoon Salt
  • 1/8 teaspoon Cayenne Pepper
  • 4 tablespoons Olive oil

Note

Serving Suggestions:
1) You can serve this side dish with toasted bread slices, or fresh-cooked Basmati Rice, or Naan, Roti Chapathis etc.

Note:
1) You can increase cayenne pepper, if you like.

Directions

Step 1
Prepare vegetables. Cut into 1 inch squares, and keep them in separate bowls.
Step 2
Add 3 tablespoon oil to a saute or deep frying pan on medium heat. When oil is hot, add onions. Cook for 3 minutes. Stir once in a while with a flat turner.
Step 3
Add bell pepper, eggplant to the mixture. Add 3/4 teaspoon salt and the cayenne pepper. Cook for 3 more minutes.
Step 4
Add the tomatoes. Turn and stir the vegetables. Cook for a minute more or until eggplant is cooked but firm. Use a toothpick to test an eggplant piece. Turn the heat off.
Step 5
In a separate small frying pan, add 1 tablespoon of oil on medium heat. When hot, add the sliced artichokes carefully. After a minute, using the flat turner, turn the artichokes one by one, without breaking them. Give it a minute. Turn the heat off.
Step 6
Carefully add the artichokes to the vegetable mixture and mix well.
Step 7
Serve hot.
