Ingredients
- 1 bunch Green Leaf Lettuce (torn into pieces)
- 3 - 4 Roma Tomatoes (cut into 1/2 inch pieces)
- 8 - 10 Walnuts (broken into small pieces)
- 1/4 cup Raisins
- 1 - 2 tablespoon Oil
- 1/2 teaspoon Lemon juice or Balsamic Vinegar
- 1/2 teaspoon Salt
Note
1) Serve cold for lunch or as a side dish.
2) Do not add the dressing if you want to store the salad in the refrigerator for later use. Include the dressing just before eating.
Options:
1) If you don't have Roma tomatoes, any kind of tomatoes including cherry tomatoes will be fine.
Directions
Step 1 | |
Add a teaspoon of oil to a large salad bowl. | |

Add the vegetables, walnuts and raisins. | |
Step 3 | |
Mix the lemon juice (or balsamic vinegar) and salt in a small jar or cup. Shake or mix well. | |

Pour half of the dressing around on top of the salad. Using salad spoons mix the salad gently but thoroughly. | |
Step 5 | |
Add the rest of the dressing around on top of the salad. Mix again. | |
Step 6 | |
Serve immediately. |
