Beautiful Yummy Salad
Sometimes simple things give the most satisfaction. This salad is easy to make, colorful, yummy and of course, it goes without saying that it is healthy which means we can be guilt-free! It is said that a picture is worth a thousand words. I’ll give you three pictures that will prove that statement.

Ingredients
- 4 cups Cucumber (chopped or sliced into 1/4 inch thick pieces. Either soft thin-skinned cucumber with skin, or peeled cucumber)
- 2 cups Fresh Firm Tomatoes (cut into small chunks)
- 1 Ripe Avocado (cut into small chunks)
- 1 tablespoon Lemon Juice
- 1 tablespoon Olive or Avocado Oil
- 1 teaspoon Salt
Optional
- 1/2 teaspoon Ground Black Pepper
Directions
Step 1 | |
Combine vegetables in a salad bowl. | |
Step 2 | |
Add lemon juice, oil, 1/2 teaspoon salt and pepper. | |
Step 3 | |
Mix well. Taste a little. If necessary, add more salt or pepper and mix. | |
Step 4 | |
Serve as a side dish for any many dish, or by itself with some bread or crackers. |
