Yummy Greek Salad

Who said Salad is boring? This recipe for Greek salad is not only tasty, flavorful and colorful, but it is also wholesome. I also have a few tasty variations from the norm – garbanzo beans and artichoke hearts. Garbanzo beans (Chick Peas) equalizes the ingredients, while the artichoke hearts adds a gourmet character to it! But it is very easy to make, and a must item for diet conscious, health conscious or taste conscious people! Enjoy!

Ingredients

  • 1 head Romaine Lettuce (torn into bite-size pieces)
  • 2 Tomatoes (coarsely chopped)
  • 1 Cucumber (European, tender and almost seedless variety, sliced or coarsely chopped)
  • 1/2 - 3/4 cup Kalamata Black Olives (ripe, pitted, whole or sliced into two)
  • 1 Medium Red Onion (cut into thin rings)
  • 1 Small Green Bell Pepper (cut into thin rings)
  • 1 cup Garbanzo beans (Chick Peas, canned)
  • 4 Pepperoncini Peppers (whole)
  • 4 - 6 tablespoons Olive Oil
  • 1 teaspoon Oregano (dried)
  • 1 - 2 tablespoon Lemon Juice
  • 1/2 - 1 teaspoon Black Pepper (ground)
  • 2 - 3 tablespoons Red Wine Vinegar
  • 1/2 - 1 teaspoon Salt
  • 1/4 - 1/2 cup Feta Cheese (cubed or crumbled)

Optional

  • 1/2 teaspoon Basil Leaves
  • 1/2 cup Parsley (Fresh sprigs)
  • 1 clove Garlic (minced, crushed)
  • 1 cup Artichoke Hearts (canned, cut into bite-size pieces)

Directions

Step 1
When ready to serve, place the vegetables including the artichoke hearts in a large salad bowl. Add the chick peas, pepperoncinis and olives too.
Step 2
Whisk together the rest of the ingredients (except Feta cheese) in a bowl and make the salad dressing.
Step 3
Pour the whisked salad dressing over the contents of the salad bowl. Gently toss the contents with salad spoons.
Step 4
Add the Feta cheese. Toss around the contents once again until they are mixed well. The dressing should be evenly distributed.
Step 5
After adding the dressing, serve immediately. Serve fresh and crisp.
