Tomato Raita
Raita’s are essential with Spicy Indian Food. The Yogurt in the Raita equalizes the heat and spicy tastes of the Curries and Masala dishes. Raita’s are usually made with Cucumber and or Tomato. There are other kinds too, but these are the typical ones. They are healthy, tasty, mild and goes with any Indian dish.

Ingredients
- 2 Roma Tomatoes (chopped)
- 2 - 4 cups Plain Yoghurt
- 2 tablespoons Milk
- 1/2 teaspoon Urad Dahl
- 1 Small Red Chili Pepper
- 2 tablespoons Cilantro (finely chopped)
- 1/2 teaspoon Cumin Seeds
- 1/2 teaspoon Salt
- 2 teaspoons Olive, Avocado or Sesame Oil
Directions

Mix chopped tomatoes, yoghurt, milk and salt. | |

Place a smal frying pan on medium heat. Add the oil. | |

When oil gets hot, add urad dahl and red chili. Fry until urad dahl is light golden brown. Add cumin seeds and stir fry for about 15 seconds. Remove pan and set aside. | |

Add the fried ingredients to the yoghurt mixture. Add salt and cilantro. Mix well. Refrigerate the Raita if serving later. | |

Serve cold or at room temperature. Serve as a side dish with Naan, Rice etc. |
