Veggie Paneer Masala Curry

This is a delicious curry with veggies, spices and paneer (firm cheese cubes). It has color, flavor and great taste. It goes well with a lot of breads, such as Rotis, Naans, Chapathis etc. Sometimes, if you are the adventurous type, you can even make it a layer in your sandwich! By the way, if you are Vegan, skip the Paneer (cheese cubes); it will still be yummy.

Ingredients

  • 4 cups Cawliflower Flowerlets (small pieces)
  • 1 Onion (finely chopped)
  • 1 Bell Pepper (finely chopped)
  • 2 Small Firm Tomatoes (finely chopped)
  • 1 - 2 cup Indian Cheese Cubes (Paneer)
  • 4 tablespoons Cooking Oil
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Garam Masala Powder (North Indian spice blend)
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Salt

Optional

  • 4 cloves Garlic (finely chopped)
  • 2 tablespoons Tomato Paste
  • 1/2 teaspoon Hing
  • 1/4 cup Cilantro (finely chopped)

Note

Serving Suggestions:
1) Serve hot.
2) If you are Vegan, skip the cheese cubes.

Options:
1) Increase or decrease salt and spices as you like.

Directions

Step 1
Place a medium non-stick fry pan on medium heat.
Step 2
Add 1 tablespoon oil. When oil is hot, add the cheese cubes. Sprinkle with 1/4 teaspoon salt evenly. Stir fry until cheese cubes are golden brown. Do not burn them. Transfer the contents to a bowl and set aside.
Step 3
Add 1 tablespoon oil to the fry pan. Add the onion. Cook for 3 minutes, or until onion is cooked.
Step 4
Add garlic, bell pepper and 1/2 teaspoon salt. Cook for 5 minutes or until the veggies are cooked. Add the chopped tomatoes. Stir fry for a minute or two. Transfer the contents to a bowl and set aside.
Step 5
Add 2 tablespoons of oil to the fry pan. Add the cawliflower pieces and 1/2 teaspoon salt. Sprinkle with 3 or 4 tablespoons of water on top. The curry should not be runny, but it should be moist. Cook for 3 minutes.
Step 6
Add turmeric and spices. Add the tomato paste. Mix. Cook for 2 more minutes, or until cawliflowers are cooked but firm. Don't overcook.
Step 7
Add the fried veggie mixture to the cawliflower curry in the pan. Add the cilantro. Add the fried cheese cubes too. Mix thoroughly.

Serve hot with Rotis, Naans, Chapathis or a hot bed of Basmati Rice.
