Colorful Flavorful Veggie Rice

A healthy rice and veggie dish, with no allergenic ingredients, vegan, vegetarian and no sugar, looks colorful, mildly spiced and flavorful, very easy to make and so tasty to eat.  Sorry, you can’t find any fault with this one!! Try one of the salads or Raitas with this tasty rice dish!

Ingredients

  • 1 Package Frozen Carrots & Peas ((small or medium size))
  • 3 tablespoons Olive oil
  • 4-6 Bay leaves
  • 4 Cloves
  • 2 Cardamom in Shell
  • 1/4 teaspoon Cayenne pepper (Optional)
  • 3/4 cups Basmati Rice
  • 1 & 1/4 cup Water

Note

Serving Suggestions:
1) Serve as a main dish.
2) Serve with a salad, cottage cheese or just plain yoghurt as a side dish.

Options:
1) You can reduce or increase salt or cayenne pepper.

Directions

Step 1
Cook the Basmati Rice. Use a Rice Cooker or a Pressure Cooker so that the rice does not turn out mushy or too dry. If you use a pressure cooker, add 1 & 1/4 cups of water for 3/4 cup of rice. You can use the Recipe at Cooking Rice, but reduce the water at first, add more as needed.
Step 2
Add oil to a saute/fry pan. When hot, add cloves, cardamom and bay leaves. Stir fry for 2 minutes.
Step 3
Add the frozen carrot and peas to the pan. Add 1/2 teaspoon salt. Cook for 4 minutes or until carrot is cooked but firm. Keep stirring every 30 seconds.
Step 4
Add the cooked rice to the mixture. Add 1/2 teaspoon salt. Use a flat turner, and turn the mixture around. Mix thoroughly without mashing the contents.
Step 5
Serve hot.
