Easy Yummy Almond Walnut Cookies

These cookies are really very easy to make, and they are very tasty too. Baking the cookies in the Microwave oven makes it fast and convenient. You can use a glaze or topping, or just use it as a plain snack. If you skip the butter and milk and use more cooking oil and almond milk, it becomes Vegan.

Easy Yummy Almond Walnut Cookies

Ingredients

  • 1 cup Almond Powder
  • 1/4 cup Cooking Oil
  • 3/4 cups All Purpose Flour (maida)
  • 1 teaspoon Baking Powder
  • 1 cup Brown Sugar
  • 2 - 4 tablespoons Milk
  • 1/2 cup Butter (melted butter or ghee)
  • 1/2 - 1 cup Walnuts (chopped)
  • 1/4 teaspoon Salt

Note

Serving Suggestions:

1) Serve with a topping or plain.

Options:

1. If you are diabetic or don't want to take any sugar, or less sugar,
a) Either you can add a sugar substitute,
b) Or you can use half brown sugar and half sugar substitute,
c) Or you can bake without any sugar, and sprinkle a sugar substitute on top of individual cookies and microwave for about 15 seconds.
2. You can skip the butter, or reduce it and add more cooking oil.
3. If you are Vegan, you can skip the butter and use cooking oil instead. And instead of milk, you can use almond milk.

Directions

Step 1
Place the butter, oil and brown sugar in a medium bowl. Mix thoroughly. Blend well.
Step 2

In a different small bowl, add the almond powder, all purpose flour, salt and baking powder. Mix thoroughly.

Step 3

Add the flour mixture to the bowl with the oil, butter and sugar mixture. Add milk, one tablespoon at a time. Using a fork or a large spoon, mix the batter thoroughly, until it becomes a soft but thick cookie dough.

Step 4
Add the chopped walnuts to the cookie dough. Mix thoroughly.

Step 5

Grease a microwaveable cookie sheet (or a shallow casserole dish) with cooking oil. Transfer the cookie dough from the bowl to the cookie sheet, and spread the cookie dough evenly, about 1/2 inch thick layer.

Step 6

Place it in the Mircrowave oven and bake on High heat for 5 minutes, or until the dough looks dry at the top. When a toothpick inserted comes out clean, remove the casserole dish from the oven. Do not overcook. The cookie dough will still cook just a little more after you remove it from the microwave oven.

Step 7

Cool the baked cookie dough on a wire rack. A wire rack is preferable because when cookies are left to cool on the baking sheet, they continue to bake and may become overdone. A rack allows air to circulate under the cookies, cooling them quickly. If you do not have a cooling rack, try to elevate the baking pan somehow, leaving room underneath the pan to cool off.

Step 8

When slightly cool, using a bread knife, slice the baked dough into cookies. Add a topping, or enjoy it plain and simple.
