Yummy Easy Healthy Cucumber Salad

Some dishes are so easy and simple that they are not truly appreciated. For example, this is a simple salad that will be perfect with any suitable main dish. And if the main dish is spicy, this salad will prove to be an amazing equalizer.

I added this recipe just now, to offer you a wonderful healthy salad as a side dish, to go with another recipe which also I added only just now : Spicy Stuffed Peppers. However, I prepare this salad quite often as a side dish to several Italian, Indian or other hot or spicy main dishes.

Yummy Easy Healthy Cucumber Salad

Serves 2
Cook time 5 minutes

Ingredients

  • 1 Large Cucumber (peeled; thin-skinned cucumbers need not be peeled)
  • 1/2 teaspoon Salt
  • 2 tablespoons Olive Oil

Optional

  • 1 teaspoon Black Pepper (fresh ground)
  • 1 teaspoon Oregano
  • 1/2 cup Mozzarella Cheese (grated)

Directions

Step 1
Slice the cucumbers into thin slices.
Step 2
Sprinkle olive oil on a platter all around.
Step 3
Sprinkle about 1/2 teaspoon of salt on top of the olive oil.
Step 4
Sprinkle a little of the spices on top.
Step 5
Place the cucumbers slices in a single layer on the platter.
Step 6
Sprinkle again a little salt and spices, this time on top of the cucumbers.
Step 7
Finally, sprinkle with grated mozzarella cheese, if you are not Vegan.

Serve cold as a side dish to any main dish.
