- 18 pieces Artichoke Hearts (Cut into chunks; see picture)
- 1 Onion (finely chopped)
- 1 Bell Pepper (finely chopped)
- 6 - 8 cloves Garlic (finely chopped)
- 1 can Tomato Sauce
- 1 can Diced Tomatoes (canned or fresh)
- 2 teaspoons Salt
- 1 teaspoon Cayenne Pepper
- 1 - 2 teaspoon Italian Spice Blend
- 1 teaspoon Basil (dried)
- 1/2 teaspoon Black Pepper (fresh ground)
- 1/4 cup Parmesan Cheese (finely grated)
- 4 - 6 tablespoons Olive Oil (or any cooking oil)
- 2 cups Mozzarella Cheese (Grated)
- 1 cup Cottage Cheese (or Ricotta Cheese)
