Easy Yummy Healthy Colorful Salad

This is really very easy to prepare. It is ideal when you want to have a quick but healthy and tasty meal. It is also great as a side dish with a main meal.  If you are Vegan, just skip the cheese.

Easy Delicious Healthy Colorful Salad

Serves 2
Cook time 5 minutes

Ingredients

  • 4 - 8 cups Crisp Lettuce (torn into bite size pieces)
  • 2 Fresh Tomatoes (cut into small chunks or slices)
  • 1 cup Artichoke Hearts (bought from the store in a can or jar, cut into small chunks)
  • 1/2 cup Fresh Bell Pepper Slices (very thin slices, each about 2 inches long)
  • 1/2 teaspoon Salt
  • 2 - 4 tablespoons Caesar Dressing (Vegetarian or Vegan)

Optional

  • 1/4 teaspoon Ground Black Pepper
  • 1/2 cup Chili Jack Cheese (or Pepper Jack, vegetarian, small pieces or chunks)
  • 1/2 cup Bread Croutons (plain or flavored)

Note

Serving Suggestions:

1) Serve cold or in room temperature.
2) Serve as a side dish.
3) Serve as a meal with or without soup.

Options:

1) If you are Vegan, don't use the cheese.

Directions

Step 1


In a large bowl, add the lettuce, tomatoes, bell pepper and artichoke heart.

Step 2


Sprinkle 1/2 teaspoon salt and black pepper, if you like. Mix well with a salad spoon and fork set or long spatulas.

Step 3
Add the dressing and mix thoroughly.
Step 4


Add the cheese pieces and croutons just before serving.

Step 5


Mix well. Taste and if necessary, add 1/2 teaspoon salt at a time and mix again.

Step 6


Serve cold or in room temperature.
