Easy Yummy Healthy Colorful Salad
This is really very easy to prepare. It is ideal when you want to have a quick but healthy and tasty meal. It is also great as a side dish with a main meal. If you are Vegan, just skip the cheese.

Ingredients
- 4 - 8 cups Crisp Lettuce (torn into bite size pieces)
- 2 Fresh Tomatoes (cut into small chunks or slices)
- 1 cup Artichoke Hearts (bought from the store in a can or jar, cut into small chunks)
- 1/2 cup Fresh Bell Pepper Slices (very thin slices, each about 2 inches long)
- 1/2 teaspoon Salt
- 2 - 4 tablespoons Caesar Dressing (Vegetarian or Vegan)
Optional
- 1/4 teaspoon Ground Black Pepper
- 1/2 cup Chili Jack Cheese (or Pepper Jack, vegetarian, small pieces or chunks)
- 1/2 cup Bread Croutons (plain or flavored)
Note
Serving Suggestions:
1) Serve cold or in room temperature.
2) Serve as a side dish.
3) Serve as a meal with or without soup.
