Flavorful Couscous and Veggies
This recipe with Couscous is typically used as a side dish. But with other side dishes with it, it can very well be served as a main dish. You can make it as tangy as you like by adjusting more lemon juice. It is very easy to make, delicious to taste and healthy too! Enjoy!

Ingredients
- 1 cup Couscous (original flavor)
- 2 cups Celery (Peeled and finely chopped)
- 3 Roma Tomatoes (finely chopped)
- 2 - 4 tablespoons Lemon Juice
- 2 - 4 tablespoons Olive Oil
- 1 - 2 tablespoon Parsley (Fresh parsley finely chopped, or dry parsley flakes)
- 1 teaspoon Salt
- 2 cups Water
Optional
- 1/2 cup Cilantro (finely chopped)
Note
Serving Suggestions:
1) As side dishes, serve a Greek salad or canned pineapple cubes.
Options:
1) If you like this dish mushy, add more water while cooking.
2) If you want it dry, add just 1 cup of water.
3) For more tangy taste, add more lemon juice.
4) For a chili-hot taste, add 1/4 teaspoon of cayenne pepper or 1/2 teaspoon of ground black pepper.
Directions

Heat the water in a kettle until very hot. | |

In the meanwhile, place a non-stick deep frying pan on the stove on medium heat. Add oil and heat a little. | |

Add celery and cook for 3 minutes or until celery is cooked. | |

Add tomatoes, parsley and salt. Cook for 2 more minutes. | |

Add couscous to the mixture. Add one and a half cups of hot water from the kettle. Leave the pan on Low heat or Simmer for 2 more minutes or until Couscous is cooked. | |

Add lemon juice and cilantro. Mix thoroughly. | |

Serve hot. Or refrigerate and serve cold. |
