Tomato Raita
Raita’s are essential with Spicy Indian Food. The Yogurt in the Raita equalizes the heat and spicy tastes of the Curries and Masala dishes. Raita’s are usually made with Cucumber and or Tomato. There are other kinds too, but these are the typical ones. They are healthy, tasty, mild and goes with any Indian dish.

Tomato Raita (Salad)

Ingredients
- 2 Roma Tomatoes tomatoes without much juice in them
- 4 cup Plain Yoghurt
- 2 tbsp Milk
- 1 small Red Chilli whole red chilli, not broken, optional
- ½ tsp Urad Dahl
- ½ tsp Mustard Seeds and/or cumin seeds
- ½ tsp Cumin Seeds optional
- 1 tsp Oil
- 1 tbsp Cilantro finely chopped
- ½ tsp Salt
Instructions

Place a small frypan on medium heat. Add oil.

When oil gets hot, add the red chilli and mustard seeds.

When the mustard seeds start to crackle a little, add the urad dahl and cumin seeds.

Fry until urad dahl is light golden brown. Do not fry the urad dahl too much. Remove frypan from stove.

Add the fried contents to a salad bowl or container.

Add chopped tomatoes to the bowl.

Add yoghurt, milk and salt. Mix well.

Garnish with cilantro.

Serve cold.
