Versatile Penne Pasta

This recipe uses wholegrain versatile Penne Pasta which is usually used in Italian cooking, but it becomes a gourmet dish when it is made in Indian Style. It is healthy, delicious and so easy to make too. You can also use regular Penne Pasta for this recipe.

Ingredients

  • 2 cups Penne Pasta whole grain or regular
  • 1 Bell Pepper chopped
  • 1 Onion chopped
  • 1 tsp Mustard Seeds
  • 1 tsp Urad Dahl
  • 1 small Green Chilli or half of a big one, finely chopped
  • 2 tsp Lemon Juice
  • 1 tsp Salt
  • 4 tbsp Oil

Instructions

  1. Cook the pasta according to package directions.
  2. Place a medium non-stick wok or pan on medium heat.
  3. Add oil. When oil is heated, add mustard seeds and urad dahl.
  4. When mustard seeds crackle rapidly or the urad dahl is golden brown, add the green chili. Stir fry for a minute.

  5. Add the bell pepper, onion and half a teaspoon salt. Stir fry and cook until the vegetables appear glazed and soft.

  6. Add the cooked penne pasta to the cooked vegetables. Mix.

  7. Add the lemon juice and half a teaspoon salt. Mix thoroughly.

  8. Serve hot.
