Risotto is supposed to be an Italian rice dish. But even though the ingredients in this recipe are not typically Italian, I am taking the privilege of calling it Risotto, since it is actually a blend of rice and other interesting ingredients. This item is very easy to make, can be mild or spicy, and it is healthy too.

Ingredients
- 1 cup Long Grain White Rice
- 2 Vegetarian Burger Patties
- 2 Tomatoes
- 2 Green Onions finely chopped
- ½ tsp Cayenne Pepper
- ½ Ground Black Pepper
- ¼ cup Cilantro finely chopped
- 1 tsp Salt
- 6 tbsp Oil Avocado, Olive, Canola, Other
- 1 tbsp Lemon Juice Cooking Lemon Juice or Lime Juice

Cook the rice. Don't cook it mushy. Use this Link : Cooking White Rice

Place a medium non-stick frypan on medium heat. Add 2 tablespoon oil and spread it.

Place the burger patties in the frypan and heat them through for 2 minutes.

Spray a little oil of top of the patties. Turn them over with a flat spatula. Cook them for another 2 minutes or until the patties are golden brown. Do not burn them. When done, remove the patties and set them aside on a plate.

Add 4 tablespoon oil to the frypan.

Add the green onion. Cook for 2 minutes.

Add the chopped tomatoes, 1/2 teaspoon salt, cayenne pepper and the black pepper. Cook for 2 minutes.

Add half of the cooked rice to the mixture in the frypan. Add 1 teaspoon salt and half of the cilantro. If you like it tangy, add 1 teaspoon lemon juice. Mix the contents gently with a non-stick spatula, without mashing the rice.

Chop the burger patties into 1/2 inch cubes.

Add them to the fry pan and mix by turning around the contents gently. If you like, you can add the veggie burger cubes separately on each serving plate, instead of mixing it with the contents in the frypan.

If you like to extend the quantity of the dish, or you like more rice, add the rest of the unused rice to the frypan, add ½ tsp salt, add more of the other ingredients if you prefer, and mix thoroughly.

Garnish with cilantro. Serve hot.
