Just a simple recipe using Rice Noodles, some Vegetables and some Mexican spices. It is delicious, beautiful and healthy. Very easy to prepare. Mexican Cuisine lends itself beautifully to Vegetarian Food. It can be mild, spicy or hot. You can adjust the spices according to your taste.

Mexican Rice Noodles & Vegetables
Just a simple recipe using Rice Noodles, some Vegetables and some Mexican spices. It is delicious, beautiful and healthy. Very easy to prepare.
Ingredients
- 1 - 2 Packets Rice Noodles depending upon packet size
- 1 Onion finely chopped
- 1 Bell Pepper finely chopped
- 2 - 3 cup Mixed Vegetables (Frozen) containing corn niblets, carrots, peas, string beans, lima beans etc.
- 1/2 cup Cilantro finely chopped
- 1 - 2 tsp Mexican Chili Powder
- 1 tsp Salt
- 1 tbsp Lemon Juice cooking kind
- 2 - 4 tbsp Salsa
- 4 tbsp Cooking Oil olive, avocado, Canola, or another
Instructions

Place a medium or large non-stick pan on medium heat. Add 2 tablespoons oil.

When oil is hot, add the onion. Add 1/2 teaspoon salt. Cook for 3 minutes.

Add the bell pepper. Cook for 3 more minutes or until cooked but firm.

Add the mixed veggies, mexican chili powder and 1/2 teaspoon salt. Add two more tablespoons of oil.

Stir fry until veggies are cooked, but firm. Then set the heat to the lowest, like simmer.

Cook the rice noodles according to package directions. While cooking the rice noodles, add 1 teaspoon salt in the water. Drain the noodles in a colander.

Add the cooked rice noodles to the fry pan.

Add the salsa, lemon juice and cilantro.

With the spatula, turn around the contents of the pan gently without mashing the noodles. Mix thoroughly.

Add more salt, chili powder or lemon juice, according to your taste. Mix well.

Serve hot.
