Spicy Tangy Rotini Pasta
This is a delicious versatile pasta recipe with veggies, a spicy sauce and aromatic herbs. You can make it mild too by cutting down on the spices and herbs. It is delicious hot or cold.
Ingredients
- 2 cups Rotini Pasta
- 1 Onion finely chopped
- 1 Bell Pepper finely chopped
- 4 cloves Garlic finely chopped
- 2 cups Carrots and Peas frozen
- 1 cup Italian Cut Beans frozen
- 1 can Tomato Sauce 15 oz.
- ½ tsp Cayenne Pepper
- ½ tsp Ground Black Pepper
- 1 tsp Italian Spice Blend
- 1 tsp Oregano
- 1 tsp Salt
- 4 - 6 tbsp Olive Oil
- 1 cup Cottage Cheese plain - regular, low-fat or non-fat
- 1 cup Grated Parmesan Cheese
Instructions

Cook the Rotini Pasta according to package directions.

Place the frozen carrots and peas, 2 cups of water and 1 teaspoon salt in a microwaveable bowl and cook for 6 minutes, or until cooked but still firm. Drain in a colander. Set aside.

Place a deep frypan on medium heat. Add 4 tbsp oil. Add chopped onion and bell pepper. Add 1/2 teaspoon salt. Stir fry for 3 minutes.

Add garlic. Cook for 2 more minutes or until the veggies are cooked.

Add the frozen beans, 1/4 cup water and 1/2 teaspoon salt. Cook for 5 minutes or until the beans are cooked. If too dry, add a little more water.

Add the boiled carrots and peas to the pan.

Add the tomato sauce and ⅛ cup water. If the tomato sauce does not have salt, add 1/2 teaspoon salt to the pan.

Add the spices and mix.

Mash the cottage cheese in a bowl or blend it with a hand blender. Add it to the sauce.

If the sauce is too thick, add a few tablespoons of water. Mix well. See pictures of the sauce.

Add the cooked rotini pasta to the frypan. Mix thoroughly.

If you like, add 1 or 2 more tbsp olive oil to the pasta mixture, and mix well.

Check for taste and, if you like, add more salt and spices. Mix well.

Add the grated parmesan cheese. Mix thoroughly. Turn off the stove.

Serve the Rotini Pasta hot, but it will taste great at room temperature or cold.

Serve the pasta with a side of bread or garlic toast.
Recipe Notes
1. If you are Vegan, skip the cheeses.
2. You can refrigerate this dish. Reheat in the microwave oven.
3. Instead of adding the grated parmesan cheese to the pan on the stove, you can add it on individual servings on the plate and heat it up in the mircrowave oven.
