Linguine Upma Indian Style

Even though this Upma made in Indian style usually uses Vermicelli or Angel Hair pasta, I used Linguine. But there is no difference in the delicious taste. You can use Fettuccine too, instead of Linguine for this recipe. Healthy vegetables, herbs and spices are used here. This Upma can be prepared bland, mild or as spicy as you like.

Linguine Upma | Indian Style

This Upma can be prepared bland, mild or as spicy as you like. Healthy vegetables, herbs and spices are used here.

Ingredients

  • ½ package Linguine or Fettuccine, broken into 2 pieces
  • 1 Bell Pepper finely chopped
  • 1 Onion finely chopped
  • 1 small Green chilli serrano peppers, finely chopped, the amount of chillies depends on your taste
  • ¼ cup Cilantro fine chopped
  • 1 tsp Mustard Seeds
  • 1 tsp Channa Dahl
  • ½ tsp Turmeric
  • ½ tsp Hing Asafoetida
  • 3 tsp Salt
  • 4 tbsp Olive Oil
  • 2 tbsp Lemon Juice

Instructions

Cook the Linguine

  1. Break the linguine (sticks) into 2 pieces.

  2. Add 3 to 4 quarts of water to a large pot. When water starts boiling, add the linguine.

  3. Cook linguine according to package directions.

Prepare the Veggie Mixture

  1. In the meanwhile, heat oil in a deep frying pan. When hot, add mustards seeds and channa dahl.

  2. When channa dahl is golden brown, add chopped green chilli, onion, bell pepper, and 1/2 tsp salt. Stir with a ladle, and cook for 2 minutes, or until vegetables are cooked.

  3. Add turmeric and hing. Stir for a minute.

Prepare Linguine Upma

  1. Drain the linguine. Add it to the fry pan. Mix well.

  2. Add 1 tsp more salt and lemon juice.

  3. Add the cilantro too. Mix thoroughly.

  4. Serve hot, using a pasta fork and the ladle.

Recipe Notes


This dish tastes great when served hot, but it will be quite tasty lukewarm or even cold.

Serving Suggestions on the side :
1) Serve yoghurt or cottage cheese (if not Vegan).
2)
Serve Raita - Yoghurt typically mixed with grated or chopped cucumber and or tomatoes (if not Vegan).

3) Serve Indian pickles. 
4) Serve Fruit.
5) Serve Potato Chips.
