Easy Celery Tomato Rice
Easy Celery Tomato Rice is really an easy recipe for a simple but tasty, nutritious dish. It is aromatic because of the Basmati rice, Celery, Tomatoes and mild spices. I used Roma Tomatoes because they have less water and more flesh. This dish can be made mild enough for kids. It can be used for Lunch or Dinner. Really easy to make and delicious.

Easy Celery Tomato Rice
This is an easy recipe for a simple but tasty, nutritious dish. Just celery, tomatoes, rice and a little healthy spice to make it nice. Try it, you will love it!
Ingredients
- 1 bunch Celery trimmed and cut into chunks, see picture
- 1 cup Rice basmati rice, or long grain white rice, see instructions for cooking
- 2 Roma Tomatoes cut into chunks, see picture
- 1 tsp Cumin Seeds
- ¼ tsp Cayenne Pepper optional, add more to taste
- ¼ tsp Ground Black Pepper optional
- 1 tsp Salt
- 2 tbsp Oil
- 1/4 cup Cilantro finely chopped
Instructions

Cook the Rice. Use this Recipe.

Add oil in medium sized non-stick pan on medium heat.

Add cumin seeds and fry for a minute with a flat spatula. Do not burn the cumin seeds.

Add celery pieces, 1/2 teaspoon salt and the spices. (Celery does not absorb salt. Add more salt to taste after the cooked rice has been mixed with the vegetables.)

Add ⅛ cup water to the pan. Cover and cook for 3 minutes.

If contents look dry, add ⅛ cup of water.

Stir, and cook for 3 more minutes, or until celery is cooked but firm. Do not overcook.

On medium to high heat, add the tomato chunks to the celery mixture. Stir the contents. Don't burn them.

When the tomato looks a little roasted, it is time to add the rice.

Add the cooked rice to the pan. Add 1 tsp salt.

Stir the contents gently and mix thoroughly. Do not mash the rice, unless you like the dish mushy.

Add the cilantro. Mix well.

If you like the celery rice really tangy, you can add a tsp of lemon juice to the celery rice and stir thoroughly.

Serve hot, with a side dish of potato chips or Papad, or cold cucumber or tomato Raita (if not vegan).
