Paneer Masala Unique

I call my recipe Paneer Masala Unique because it uses great ingredients but prepared in an easy way. Even though this is the usual delicious curry with veggies, paneer (cheese cubes) and spices, my recipe creates this dish without the hullabaloo that the usual recipes of other people have. Veggies, spices and cheese cubes are used in a wholesome, healthy manner, but there is beautiful color, wonderful flavor and great taste. What more do you need?

Paneer Masala goes well with a lot of breads, such as Rotis, Naans, Chapathis etc. You can also serve it on a hot bed of basmati rice or on a toast. You can even make it a layer in your sandwich! By the way, if you are Vegan, skip the Paneer (cheese cubes), but the dish will still be yummy because there are enough veggies and spices to make it an interesting dish.

Paneer Masala Unique

Ingredients

  • 2 cups Paneer Indian Cheese Cubes
  • 1 Onion finely chopped
  • 1 Bell Pepper finely chopped
  • 1 Tomato finely chopped
  • 4 cloves Garlic finely chopped
  • 1 tbsp Tomato Paste
  • 1 tsp Kashmiri Red Chilli Powder or ½ to 1 tsp Cayenne Pepper
  • 1 tsp Garam Masala Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Salt
  • 4 tbsp Oil
  • ¼ cup Cilantro finely chopped, optional

Instructions

  1. Place a medium non-stick frypan on medium heat.

  2. Add 1 tablespoon oil. When oil is hot, add the cheese cubes. Sprinkle with 1/4 teaspoon salt evenly. Stir fry until cheese cubes are golden brown. Do not burn them. Transfer the contents to a bowl and set aside.

  3. Add 1 tablespoon oil to the frypan. Add the onion. Cook for 2 minutes.

  4. Add garlic, bell pepper and 1/2 teaspoon salt. Add turmeric and other spices. Cook for 5 minutes or until the veggies are cooked.

  5. Add the chopped tomatoes. Stir fry for a minute.

  6. In a small bowl, add a tbsp of water to the tomato paste. Mix. Add this to the frypan and cook for 1 minute.

  7. Add the stir-fried paneer to the frypan. If you like, add the cilantro too. Mix thoroughly.

  8. Serve hot.
