Garlic Rasam can be made in two ways – one quick and easy, and another that uses freshly ground spices and requires a little more time. Easy Garlic Rasam

This recipe focuses on the easy version, ideal for days when you want a light, healthy rasam that can be prepared quickly.

Ingredients

  • 10 - 15 Garlic Cloves peeled, cut into thick slices
  • 1 tsp Mustard Seeds
  • 2 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • ½ - 1 tsp Ground Black Pepper
  • ½ - 1 tsp Cayenne Pepper
  • 1 tsp Hing asafoetida
  • 1 tsp Turmeric
  • 2 tsp Salt
  • 2 - 3 tsp Tamarind Paste
  • 4 - 6 Curry Leaves
  • 2 tbsp Cilantro finely chopped
  • 1 tbsp Oil
  • 2 tsp Rice Flour

Instructions

  1. Place the sauce pan again on medium heat. Add 1 tablespoon oil.

  2. When oil is hot, add mustard seeds. When mustard seeds crackle rapidly, lower the heat and add 4 cups of water.

  3. Add the garlic pieces, turmeric, curry leaves and 1 tsp salt to the water. Stir with a large spoon or ladle. Cook for 5 minutes.

  4. Add ground pepper, cayenne powder, cumin powder, coriander powder and hing to the pan.

  5. Mix the rice flour in 2 tbsp of cold or lukewarm water and mix well. Add this to the garlic mixture in the pan.

  6. Add 2 tsp tamarind paste. Stir the contents.

  7. Cook for 5 more minutes, or until garlic is soft and cooked well. Don't overcook the garlic.

  8. Add the chopped cilantro. Mix well.

  9. Taste a little. Add more salt and tamarind, if necessary.

  10. Serve the Rasam hot, on a hot bed of rice.
    Basmati Rice
  11. You can serve cooked vegetables as a side dish, and Raita (if you are not vegan). Potato chips will also go well with Garlic Rasam.
