World's Best Vegetarian Lasagna

I can safely say that you will love this recipe I have here for world's best vegetarian lasagna. It is not only tasty, but also relatively healthy. Two methods of preparing this Lasagna are offered here. Whichever method you choose, it will be fun making this dish, and even more fun eating it!

Ingredients

  • 9 Lasagna noodles
  • 4 Garlic cloves finely diced
  • 1 Onion finely chopped
  • 1 pkg Spinach frozen cut leaf spinach
  • 1 can Tomato Sauce 15 oz.
  • 1 can Tomato Paste 6 oz.
  • 4 tbsp Olive Oil
  • 1 tsp Basil dried
  • 1 tsp Oregano
  • 1 tsp Italian Blend Spice
  • ½ tsp Ground Black Pepper
  • ½ tsp Cayenne Pepper optional
  • 1 tsp Salt
  • 2 cups Ricotta Cheese or firm cottage cheese
  • 2 cups Mozzarella Cheese
  • 1 cup Parmesan Cheese grated, fresh or canned
  • 6 slices Provolone Cheese optional
  • Water

Instructions

Prepare the Sauce

  1. Place a medium non-stick pan on medium heat.
  2. Add oil to the pan. When oil is hot, add the onion. Cook for 3 minutes.
  3. Add garlic and half a teaspoon salt. Cook until onion and garlic are cooked.
  4. Add the spinach, ½ cup water, and ½ teaspoon salt. Mix with a non-stick spoon or spatula. Cook for 5 minutes or until spinach is cooked.

  5. Add the tomato sauce, tomato paste, and the spices. Cook for 3 minutes on medium heat. Remove pan from the stove and set aside.

  6. Add the ricotta or cottage cheese and ½ cup parmesan cheese to the spinach sauce mixture in the pan. Mix thoroughly. Set aside.

Prepare the Lasagna Noodles

  1. Cook Lasagna according to package directions. Drain. Don't break the noodles or tear them.

Prepare the Casserole

  1. In a 13 x 9 casserole baking dish, spray or spread cooking oil. Place a thin layer of the spinach sauce mixture.

  2. Note 1 : If you are going to use the microwave oven, make sure the baking casserole pan is microwave safe. Also make sure that the dish will fit in your microwave oven. If not, use the conventional oven and follow the corresponding instructions.

  3. Note 2 : If you are going to use the conventional oven, make sure the baking casserole pan is safe for a conventional oven.

  4. Place 3 lasagna noodles lengthwise in the casserole dish. Add a layer of the spinach sauce mixture over the noodles. Add a layer of mozarella cheese over the spinach sauce.

  5. Place 3 more lasagna noodles on top of the cheese layer. Add a layer of the spinach sauce mixture over the noodles. Add a layer of mozarella cheese over the spinach sauce.

  6. Layer the provolone slices on top. It will add flavor and taste to the lasagna. It will also ensure that the layers of your lasagna hold together well when sliced.

  7. Place the last 3 lasagna noodles on top of the cheese layer. Add a layer of the spinach sauce mixture over the noodles. Add the last layer of mozarella cheese over the spinach sauce.

  8. Sprinkle grated parmesan cheese on top of the lasagna.

Bake the Lasagna in the Conventional Oven

  1. Preheat the oven to 375 degrees f.
  2. Place the oven-safe casserole dish in the oven for 20 minutes, or until the cheese is thoroughly melted.

  3. If you prefer a crusty, crispy top, you can set the oven to Low Broil, and place the baked dish for a minute in the oven. But make sure to watch so that the lasagna does not get burnt. As soon as the top is slightly golden brown, remove the casserole from the oven and set it on the counter top.

Bake the Lasagna in the Microwave Oven

  1. Place the microwave-safe casserole dish in a large microwave oven for 3 to 6 minutes depending upon your microwave oven, or until the cheese is thoroughly melted.

  2. Remove the casserole dish from the microwave oven and set it on the counter top.

Cut the Lasagna and Enjoy!

  1. Rest lasagna for 10 to 15 minutes before serving.

  2. Cut the lasagna into squares, or in sizes that you prefer.

  3. Serve and Enjoy!
