This salad is simple but delicious, very easy to make, tastes really delicious and it goes without saying that it is absolutely wholesome and healthy.
Peel the cucumbers, if that's the way you like them. If they are small, narrow Persian cucumbers, slice them into 1/8 inch thin slices. Otherwise, cut the cucumbers into small pieces or slices.
In a large salad bowl, add half of the quantity of the following items : lettuce, cucumbers, tomatoes, whole olives, onion slivers, carrots, apple, raisins, cheese and walnuts pieces.
Sprinkle 1/2 teaspoon salt, 1 tablespoon olive oil and 1/2 teaspoon lemon juice.
Using salad spoons, gently lift and turn around the contents, until well mixed.
Now add the remaining quantities of all the items specified in Step 2.
Sprinkle 1/2 teaspoon salt, 1 tablespoon olive oil and 1/2 teaspoon lemon juice.
Using the salad spoons, gently lift and turn around the contents, until well mixed.
Pour ¼ cup of Vegan Caesar Salad Dressing on tops of the salad contents. Toss the salad contents thoroughly.
Add the croutons and tortilla strips on top of the salad.
Serve the salad immediately while the veggies are still crisp and fresh.
More salad dressing, salt or lemon juice can be added according to one's taste preferences.
Serving Suggestions:
1) Serve salads as soon as you make them.
2) Serve them at room temperature or slightly cold depending upon your preference.
3) Add more salt, lemon juice or olive oil according to your taste preferences.
Options:
1) If you want to make the salad ahead of time and refrigerate it, just don't add the dressing items, such as salt, lemon juice, olive oil etc. Add these, or any dressing just before serving and mix thoroughly and serve immediately.
2) If you want to use a dressing bought from the grocery store, Vegan Caesar Dressing is one that tastes great with this salad.
3) If you are Vegan, skip the cheese.
