This recipe uses Rice Noodles, but in the Italian style. It may be a simple dish using some veggies and some spices. But it tasty, colorful and healthy. If you are Vegan, skip the cottage cheese.
When oil is hot, add the veggies and 1/2 teaspoon salt. Stir fry until cooked.
Add 1 cup sauce, olives and fresh basil. If you like it tangy, add 1 more cup of sauce. Mix well and cook for 1 minute.
In a small bowl, stir the cottage cheese and make it as creamy and blended as possible.
Add the cottage cheese to the mixture in the pan. Mix thoroughly. Cook for 1 minute. Set the heat to the lowest.
The rice noodles blocks used in this recipes looks like this. But you can use any kind of rice noodles.
Add the cooked rice noodles to the fry pan.
With a flat spatula, turn around the contents gently without mashing the noodles. Mix thoroughly.
